Restaurant Uformel, Copenhagen
Founded in 2014 as a counterpoint to the more polished and formal Michelin-restaurant style, Uformel offers a relaxed atmosphere where the music is louder, and the vibe is less restrained. The interior strikes a balance between elegance and informality, featuring Finn Juhl’s simple and comfortable Reading Chair. Outside, a colorful string of lights creates a warm, immediate welcome, while inside, the bar has a nightclub-like flair with bottles displayed prominently.
Here, you won’t find starched tablecloths or stiff formalities. Instead, a large wall of vibrant graffiti art sets the tone, and guests are greeted by the open kitchen, where the buzz of chefs at work becomes part of the lively ambiance.
At Uformel, flavors take center stage, showcasing a clean, deep taste supported by high-quality ingredients and precise craftsmanship—hallmarks also found at formel B. What sets Uformel apart, however, are its subtle Eastern-inspired undertones. While the dishes often have a classic foundation, they are free from rigid conventions or dogmas.
